Sharpening vs. Maintaining

To build or rebuild a clean apex takes abrasives that cut a lot of steel, and take lots of time, practice and skill. That’s sharpening, reshaping the entire bevel and resetting the knife’s geometry. It’s precise work that happens every so often depending on use.
